Cowboy Charcoal and Kangaroo Boxing Club Celebrate 22nd Annual Safeway Capital Barbecue Battle

Premium Lump Charcoal Maker Visits Washington, D.C.’s biggest food and music festival

Stockton, Calif. (June 18, 2014) – Cowboy Charcoal, maker of top selling natural hardwood lump charcoal, chips and chunks, will be at the Safeway 22nd Annual Capital Barbecue Battle in Washington, D.C. on June 21 and June 22, 2014.

Since 1959 when the first official barbecue competition, the Kaiser Foil Cook-off, took place in Hawaii, barbecue competitions have been cropping up across the country, with over 500 competitions taking place yearly. Set on America’s Main Street, Pennsylvania Ave in Washington D.C., the Safeway Capital Barbecue Battle gears for its twenty second year of fierce competition, mouth-watering bites and lively music.

Cowboy Charcoal will be hosting games and barbecue trivia, products, expertise, coupons and samples at this year’s competition. In honor of the Safeway Capital Barbecue Battle, Cowboy Charcoal paid a visit to one of Washington D.C.’s most famed barbecue joints, Kangaroo Boxing Club, to see what D.C. barbecue was all about. Owner Josh Saltzman shared his recipe for homemade sriracha sauce.

Saltzman says, “This recipe is great on all meats, especially beef and pork cuts. We use it on pork shoulder and beef short ribs all of the time. It’s even better when cooked on a charcoal grill.”

Kangaroo Boxing Club’s Homemade Sriracha

Ingredients

  • 5 cup seeded arbol chiles
  • 1/2 cup chopped garlic
  • 1 tablespoon fish sauce
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Directions

  1. Toast garlic in 4qt sauce pan. Deglaze with apple cider vinegar when garlic is browned but not blackened
  2. Add arbol chiles
  3. Add apple cider vinegar until chiles are covered
  4. Simmer until chiles are tender
  5. Strain mixture, saving liquid
  6. Blend chili/garlic mixture until smooth
  7. Add fish sauce
  8. Add strained liquid until desired consistency
  9. Salt, pepper to taste
