Cowboy’s Grilled Steak Fajitas

Fire up the grill and enjoy a quick, delicious weeknight dinner with Cowboy’s Steak Fajitas. Served with a flavorful marinade and sizzling veggies, this recipe is sure to be a hit at the dinner table.

Ingredients

Yields: 4-6

  • 2 pounds flank steak
  • 1 yellow onion
  • 2 bell peppers
  • 1 jalapeno, seeded and minced
  • 1/2 cup soy sauce
  • 1/3 cup lime juice
  • 2 tablespoons canola oil
  • 2 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons pepper
  • 12 flour tortillas

Preparation

In a medium bowl, combine soy sauce, lime juice, oil, jalapeno, chili powder, cumin, and pepper

Place steak is a re-sealable bag and pour in half of marinade

Seal bag, and allow the steak to marinate in the fridge for 3-6 hours, until ready to use

Light Cowboy Hardwood Lump Charcoal in charcoal chimney and let burn for 10-15 minutes

Spread hot coals over grilling area, and preheat grill for about 10 minutes

Remove steak from marinade and place over direct heat on the grill grate

Cover grill and allow steak to cook 5-6 minutes per side, flipping once while cooking

Cover loosely with foil and let rest for 10 minutes, and slice into thin strips

While meat rests, toss peppers and onions in bowl with remaining half cup of marinade

Place veggies over direct heat on the grill grate

Cover grill and allow veggies to cook for 5-6 minutes until tender

Remove vegetables from grill and cut into long, 1/4-inch strips and set aside

Place tortillas on grill to warm, about 20 seconds per side

Top warm tortillas with steak, veggies and desired toppings

Serve and enjoy!
