Aged Irish Cheddar Cheese Fondue with Grilled Veggies

Celebrate the luck of the Irish on St. Patrick’s Day (or any day!) with this savory beer cheese fondue.

This recipe combines Guinness stout and aged Irish cheddar cheese to create a delicious Irish-inspired dish. Grab a Guinness and get grilling! 

Ingredients

Yields: 6
Cook: 10 hours
Prep: 20 mins

•2 cups Brussels sprouts
•2 cups cauliflower florets
•1 baguette
•1/4 cup olive oil
•1 pound Irish cheddar cheese, shredded
•2 tablespoons all-purpose flour
•1 cup Guinness stout
•1/4 cup milk
•1 tablespoon Dijon mustard
•1 tablespoon garlic, minced
•1 tablespoon Worcestershire sauce
•1 teaspoon salt
•1 teaspoon pepper

Preparation

•Rinse Brussels sprouts and trim off the bottom stem and peel away the outer leaves
•Prepare grill with Cowboy Hardwood Lump Charcoal and light
•In a large mixing bowl, combine Brussels sprouts and cauliflower florets
•Toss with olive oil and mix until fully coated
•Place Brussels sprouts and cauliflower on a sheet of aluminum foil, large enough to fold and seal
•Fold aluminum foil together, pinching sides until closed
•Place on grill and allow to cook for 15-20 minutes
•Remove foil packet from grill and set aside for later use
•Slice the baguette lengthwise
•Place loaves directly on grill and allow to cook for 8-10 minutes, until golden brown
•Remove from grill and set aside for later use with veggies
•In a medium saucepan, combine Guinness, milk, mustard, garlic, Worcestershire sauce, salt and pepper
•Place saucepan over medium heat and bring to a boil
•Once mixture reaches a low boil, slowly add in cheese and flour
•Gradually stir until cheese is completely melted
•Transfer cheese to a fondue pot and serve with grilled veggies and bread
